This salad is really refreshing for summer. It is sweet and salty at the same time and the perfect side dish for your next BBQ.
My mother used to make this salad for hot summer evenings. We all loved this salad very much and it is also a perfect party salad.
What you need:
500 gr Spirelli pasta
3 sweet oranges
200 gr Emmental cheese in piece
appr. 10-14 green olives filled with almonds
some red grapes
Sweet paprika powder
4-5 Tbsp. Mayonnaise
How to prepare it:
Cook the pasta until soft and let cool.
Remove all the peel (the white skin also) with a sharp knife from 2 oranges and cut out the filets. Cut the Emmental cheese into small cubes. Cut the olives into slices. Cut the grapes into halves, remove the seeds if necessary.
Mix everything with the cold pasta. Season to you taste with salt, pepper and paprika powder and add the Mayonnaise. Squeeze the remaining orange and add the juice. Stir well and let cool for appr. 1 hour in the fridge.
My tip: my mother used canned tangerines instead of oranges. At the end she always added the juice from the can. As we do not have canned tangerines in the local supermarkets I tried it with oranges.
